Yum, Cupcakes :)




I made cupcakes for my best friend's shared lunch recently, and had a lot of fun decorating them! I think that's the best part about making cupcakes... :) All my friends said they were delicious, so I thought that I would share the tasty recipe with all of you! It really is a good recipe, that's easy to use and the result is a delicious batch of fluffy and professional looking cupcakes! 

Makes 12

Ingredients:
125g butter
1 tsp vanilla essence
1/2 cup caster sugar
2 eggs
1 cup plain baking flour
2 tsps baking powder
1/4 cup milk

Method: 
1. Preheat oven to 190 C.
2. Cream butter, vanilla and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
3. Sift flour and baking powder together. Fold into creamed mixture. Stir in milk.
4. Place 12 paper patty cases in patty tins. Spoon mixture evenly into paper cases. Bake for 15 minutes or until cakes spring back when lightly touched.
5. Transfer to a cooling rack, and when cold decorate as desired.

Be as creative as you like when decorating your cupcakes! There are no limits.... make different coloured icing, use lollies and sprinkles, use a piping bag to write or draw.... have fun with it!
